The Hog Industry The hog sector is an important element of agricultural production in every province, accounting for one in every ten dollars of Canadian farm cash receipts. The hog sector generated $3.3 billion in farm cash receipts in 2002. Pork continues to be the world's most-eaten meat, with consumption continuing to grow. The latest data shows that of the world's meat consumption, 41% is pork (versus 29% poultry and 25% beef). Over the past 20 years, the volume of pork consumption has increased by 73% world-wide. In 2002, Canada was the largest pork exporter outside the European Union.
